The reason it doesn't show you colors when you try to switch to red or green in the quick mask mode is the mask work on levels of grey from black to white so when you select another color it's just showing you the level between black and white or luminosity of your color selection while in quick mask mode. In other words it's because you were in the mask mode. You can use darker or lighter levels of grey also to very the amount your masking, kind of like adjusting the opacity slider.
