This is not how Italian's make fried Eggplant. The proper way to make it is to dredge the eggplant in flour, then egg, then the breadcrumbs. I always use Extra-Virgin Olive oil, and it may seem like a lot of oil however, you need to put enough oil into the pan so the eggplant gets nice and crispy. Remember, Olive Oil is the "good" cholesterol...a lot of people are confused by that. Easiest way to remember is this: Oil from fruits/vegetable = GOOD oil, oil from animal = BAD.

Why did you not just put the whole procedure in one video clip instead of these? You didn't even bother to label which is step 1 and so on. Am beginning to think of the same reason why you have a mustache in the first place and won't wonder if you'll have a beard next time around.. Fore'head'player . .

I've discovered two things. There is no champaign in the "champaign room" and there are no experts on "Expertvillage".

My recommendation is to go to Expertvillage and view the videos, they are still not in order, but it is easier to tell what order they go in.
