  • If there is something I haven't cooked before, I'll look up a few recipes for that dish and look for the common ingredients, the basic proportions, any special prep instructions, and the basic method or methods used. Then I don't worry about the recipe anymore and just cook. Tasting generally tells me if I need to make any adjustments.

    I like Alton Brown as well. You and he have taught me a large percentage of what I know about cooking.

  • As much as I love AB, not all his recipes have turned out the way I thought they should have when I tried them. Although I do make his English muffin recipe but I cheat and use my bread maker for the first part of it. lol

  • @VivianRinSC - Exactly! You can't follow ANY recipe exactly. Even a famous TV chef. Cooking is like music. You only follow the sheet music for a foundation, then you add the notes and melody that sounds best to you.
