According to the knife sharpening research done by John D. Verhoeven (google is your friend, large pdf to be found), there was essentially nothing accomplished using a leather belt/wheel, unless you have honing compound on it. With compound it was found to be extremely efficient.
Not necessarily. When using very high grit stones, you can either strop with a clean strop or one with very fine abrasives like 1micron diamond spray, or very high quality chromium oxide (not the cheapo stuff you buy at Lowe's).
The idea is to refine that micro burr without completely taking it off.
It technically is sharpening but the amount of metal removed is at microscopic levels, it's used to hone a edge that is already sharp(to remove the micro serrations).
Excellent instruction. On a personal note: You have a good voice and good presence, you are not hard to look at, nor to listen to. I studied under a master silversmith for two years, and you have the manner of someone confident in their competence. Congratulations on a very good instructional video. Why wasn't the blade in video introduced so I could maybe use that to get an understanding of which knives to sharpen this way?
