@klarinetta The espresso will still taste good after letting it sit for a while. The crema will have dissipated but that doesn't affect the flavour of the espresso. Crema itself is very bitter an doesn't contribute much to the flavour of the shot. Having the milk at the right temperature and well steamed will make a much better cappuccino than letting it sit and separate while you make the espresso.

I have the same Rancilio Rocky grinder set to 13. If I went set it to 11 it becomes too fine for my Gaggia to extract more than a few drops. If I set it to 4 (like in this video) my machine would probably stop working altogether.

Wrong! You need to steam the milk first of all before the making the coffee, you can grind the #beans but not make the coffee. The reason is so that once the milk has been heated you can let it rest so that the bubbes sink to the bottem and allows the top of the milk to become light and foamy, great for latte's and adding to espresso, once you have made your coffee then the milk will be prefect!
@Louieinoz dont bleed the coffee, the best idea is to keep the machine regularly cleaned, for a frequently-used machine it's a good idea to wash out the pipes every 45 min or so

@szorin13 i have the same grinder set at 9 whereas this guy has his set at 4 if i remember properly. of course, i have to tamp more because mine is set coarser. i could turn mine down to 4 too, but that would mean far less tamping.
read the descrip like normal people ;) and also a response to mlh, maybe (if you live in the US) instead of your standard drip coffee get the trader joes if you dont like the instant coffee, the trader joes stuff isnt grounds, you have to grind it yourself, and one of the important aspects is how fresh it tastes, compare freshly ground coffee to folgers, ull see what i mean :P

I count from when the water starts running... or when you flick the switch, because that's the time when the water hits the coffee and the extraction starts. I'm less fussy about counting seconds these days, and certain coffees I think favour either shorter or longer pours... but it's a good baseline to start from.

Good question Mark. I've asked that a couple of times myself around CG... but the shots seem to come through ok so I haven't really investigated further. It could be static build up or else the burrs are a bit loose when grinding sometimes... I was going to buy a replacement set of burrs and see if it made a difference... but then had advice to say it wasn't the problem. I normally break up any big clumps before I dose.
The reason for the clumps is probably that the grind is set too fine. When someone order a ristretto, I adjust the grind to make it finer, and then I get the same clumpy look on the coffee. Besides, you can tell it's too fine (unless you prefer ristrettos) from the time it takes before the water runs steadily into the cup. I should be a "hanging drip", the coffee in the filter gives too much resistance in your film, due to it being very fine.
Well I do like ristretto... It's what I aim for when I'm making coffee... Although clumping can be due to a few factors... such as static when the coffee exits the dosing chute... But I haven't had too many issues when pulling shots... the one in the video is just how I like it :)
i dont have a manual espresso machine but i plan maybe to buy one. I have now a Full automatic espresso machine from delonghi. The espresso has a nice creme but it is more like water, in your movie the espresso is more like honey, seems very thick. How can i get it thicker, mine is more like water?
Most of the time I roast my own beans... I've got a whole bunch of green beans, but I prefer a blend containing some PNG, Central American, and often an Ethiopian for something interesting...
and yeh I generally aim for short ristretto style pours... So roughly 40ml double shots... this happened to be the nicer ones I've captured on video.
That shot haunts my dreams- I got the Lady 6 years ago and got it mostly for its rep for espresso, but as I've got into latte art, I hate this machine because it was a retarded steaming mechanism- you have to keep this button pressed the whole time, and the knob is on TOP of the machine, so you need three hands- one for the steam on/off button, one for the knob, and one for the pitcher. I actually just steam with my old Krups Novo. I really should have bought a Silvia.

Well i guess it's all different... Maybe your zero point is high than mine is ? On some machines I've seen the point at which the burrs actually touch is around -4 ... Which is why it's important to calibrate Rocky before you start... Also depends on the blend... but I normally vary around a few stops either side of this.
I have a Brasilia Lady, which is comparable to a Silvia, with a Rocky- and I am shocked that your Silvia doesn't choke on grounds set at 4! I've found my sweet spot, or so I thought, between 9 and 11. But I cannot argue with that shot, it's GORGEOUS.

Maybe your grind. His came out a little too slow. It's supposed to come out steadily and be about as thick as a strand of spaghetti.

Try using a bit more espresso and tamp harder or better yet adjust the grind finer. Without a top quality grinder you're sunk though.

Most of the time I roast my own beans... I've got a whole bunch of green beans, but I prefer a blend containing some PNG, Central American, and often an Ethiopian for something interesting...
and yeh I generally aim for short ristretto style pours... So roughly 40ml double shots... this happened to be the nicer ones I've captured on video.

That shot haunts my dreams- I got the Lady 6 years ago and got it mostly for its rep for espresso, but as I've got into latte art, I hate this machine because it was a retarded steaming mechanism- you have to keep this button pressed the whole time, and the knob is on TOP of the machine, so you need three hands- one for the steam on/off button, one for the knob, and one for the pitcher. I actually just steam with my old Krups Novo. I really should have bought a Silvia.

Hrmm, yep it sounds like you should've got Silvia all along... she's the real deal :) Great espresso and great milk (with a little effort). Post up some footage of your Brasilia...

Well i guess it's all different... Maybe your zero point is high than mine is ? On some machines I've seen the point at which the burrs actually touch is around -4 ... Which is why it's important to calibrate Rocky before you start... Also depends on the blend... but I normally vary around a few stops either side of this.
And yeh, that shot was a nice one :)

I have a Brasilia Lady, which is comparable to a Silvia, with a Rocky- and I am shocked that your Silvia doesn't choke on grounds set at 4! I've found my sweet spot, or so I thought, between 9 and 11. But I cannot argue with that shot, it's GORGEOUS.
