  • @eyelessism Fillet is originally a French word, although in French I think it's spelled with just one L. The T is silent. When speaking English saying "Fillay" sounds stupid though. I live in Australia and happily pronounce it the wrong way.

  • I fillet the fish completely intact..start at the 1st fin below the head...cut all the way down just above the ribs to just before the tail..leaving an inch...flip that half over and fillet the flesh off the skin..repeat on the other side...remove the rib sections off the fillets...throw the left over carcass away in one whole piece which should be the two outside skin sections still connected to the middle carcass...no scaling..no gutting ..if your a few days away from trash day..just freeze em

    On some kinds of fish, like tuna and salmon, I leave a fair amount of meat on the spine and skeleton when I fillet them.

    When it's time for BBQ I marinate the skeleton along with the fillets and cook that too. It's actually one of the best parts of the fish.
