Some tips:1 Never use Chuck Roast! Too much Fat.(notice when picking through the meat some ended up behind the counter) Not Flavorfull. Use Top or Bottom Round Roast.More meat for the money.2 Never use Italian seasoning packets, to many chemicals. Use fresh seasonings. Garlic Oregano Paprica sage rosemarry tyme flakes oh and Onions are good too.3 Drain the Peppochini juice.Too much extra Salt! Will suck the moisture out of the meat! Add salt to taste After cooking is done if needed.Thats Living
Actually chuck roast has a lot of good flavor. In this application, though, I roast it a day or two before in a moderate oven, 300 - 325 F. after browning. 2 or 3 hours renders out a fair bit of the fat. Then you can stick it in the crockpot.
To be honest, I usually use rump roast, but sometimes the market has really good sales on chuck.
