No, the 3 routes of Fate represented 3 different stages we often go through as human. Value an ideal, compromise an ideal, and abandon the ideal all together for new ones. There is a site that translates Nasu's interview into English. Sakura is exactly like Kohaku. There are things in the game that were not available in the first few routes. Kohaku and Sakura's routes are both closing route with the most satisfying ending and details, but that doesn't mean the other routes are not canon.
I never said it was canon and I know the analogy of child, teen and adult for Fate/UBW/HF. I only said that it's generally regarded as such, or perhaps I hang around too much with the bigger fans, who all seem to regard it as such. But still, HF (I refuse to call it Sakura's route--if anything, it's more like Shirou's route) has the most resolution--closure--of all the routes, moreso than Kohaku for Far-side route in TH. I think Unlimited Blade Works is Shirou's route because the entire storyline based on future Shirou. You don't even need to raise Rin's affections too high. Rin is just secondary to the storyline. With Heaven's Feel, you have to pay attention to slutkura every of your walking minute or else she will kill you. I often think of Fate route as the most canon route because Shirou has the highest chance of becoming Archer. Also, Last Episode dedicated exclusively to Arthur and Shirou.
UBW is more like Archer's route, really. While it does focus on Shirou, it focuses more on Archer, and their ideals. HF probably has the most growth of Shirou's character, and the most radical change of ideals (or lack thereof).

@henryhenriquez I have heard tell that all routes are considered canon in F/SN because of Rin mucking around with Zelretch's dimensional magic and simply fusing the different alternate realities together. Dunno how true that is, but it does fit with Hollow Axtaria.
As for Tsukihime, Type Moon has claimed that the canon route is the Satsuki route... which is obviously their little loophole since there is no Satsuki route.
