Hey Ken, good video, here is a cooking tip, don't use BANANA leaf because it makes the food bitter, you must use PLANTAIN leaf, like we do here in latin america. They are similar but give different taste to food. FYI a banana is a fruit that can be eaten raw, while the plantain is a vegetable and must be cooked.
To keep the juice from running out, you fold the bottom part of the tortilla upwards toward the middle. Fold left, fold up, fold right. If you eat a burrito from taco bell, you'll see what I mean. :D
But MY LORD odes that achiote pork look good! I got here looking for Achiote Salmon, but I'm going to have to try this too! ^_^ Great video!

You could also, fold th bottom up, then roll from on side to the other to close it.
Anywho, you get the point. No dripping. :3

hey this looks real good can it be made with pork shoulder as well? and I noticed no salt or pepper is it in the paste?
