I'm sure you get suggestions like this all the time - but what about a 'Sarah and the King Bees' version of 'Over the Rainbow'? Beautiful song and if you are looking to your listed influences then Leona Lewis did a Mariah Careyish version of it. I'm thinking that the band's take on the Israel Kamakawiwo'ole's 'Over the Rainbow / What a Wonderful World' medly would work better. It plays better to your instrument skill set and would show off Sarah's voice. Still, a challenge! Just a thought. ;}
