LN2 has a boiling point of 77K - since a human hand is much hotter, LN2 evaporates immediately upon contact and rolls off harmlessly, they are probably just trying that out.
@saik0pod because, our hands are CRAZY hot compared to the ln2. With that, there is a layer of nitrogen 'steam' that forms between our hands and the liquid, making it totally safe.
