Not because there's anything wrong with any of the animal parts, but because there are certain things in there that can spoil the meat's flavor, such as the testicles or the lower intestines.

If you notice, the pigs have a cut from their lower abdomen to their necks where you can see there's nothing in them anymore. If that weren't the case, the intestines just spill when they cut it open.

That's what my grandfather used to do, though I'm not sure that's what factories do these days.
