Especially when customers use a product mixer to knead the product, too much air can be added to the fondant. Another cause is if you are putting the fondant on a cake before it has reached room temperature. Thanks for the reply, I must be overmixing (by hand). I get the bubbles BEFORE putting on the cake. While the fondant is still on the mat.
