You can make scrabbled eggs with nopales. Pretty good. Goes great with crumbled queso fresco.

Nopales are so good! I have some in my backward and I eat them every day. They taste even better if you eat them when they were just cut off the tree. YUM!

On the nopal filling, I forgot to say that I also added the juice of one lemon and a little olive oil.

I just had a nopal burrito for breakfast.
1 or 2 young nopal leaves, de-needled & washed
2 small tomatoes or 1/2 red bell pepper
1/2 onion
2 cloves of garlic
1/4 cup of roasted, shelled pumpkin seeds
Dice all the vegetables; add spices to flavor; add pumkin seeds...DONE AND DELICIOUS!
Eat it as a salad or a stuffing for a pita, tortilla, etc.
It's more nutritious if uncooked but it may be cooked in water or broth; onion, tomato; salt and pepper.

My parents are Mexican and love nopales. I'm not a big fan of it though. My parents and aunts/uncles love it though.
