Rice noodles would probably be delicious with this sauce. I don't see why you couldn't sub maple syrup for the agave. Brown rice syrup might not be the right flavor for it.
I'm not a vegan but I would love this along side some meat or put shrimp or grilled chicken in it, even toss in some chopped peanuts and a little mint.
I doubled the peanut sauce and used the leftover sauce to marinade tempeh that I baked. I served the noodles with wrapped sandwiches made with the baked tempeh and leftover cabbage.

The red sauce is siracha sauce (it's an Asian chili sauce with a rooster on the bottle). You can usually find it in grocery stores or Asian markets. If you can't find it, you could use cayenne pepper for the heat or chopped fresh chili. Cilantro and fresh coriander are the same.
I would think you could probably substitute tahini and balsamic vinegar. If you're making substitutions, you will definitely want to adjust the sauce to taste.

I think it may be the choice of colors and a fancier handle on the blender jar. I've used both machines, and they both are awesome.

Scallions are green onions, but you can use whatever vegetables you like in the recipe.
