    vegs. What I would like to do with eggplant is slice it thin,egg wash it,dip it in breadcrumbs,vacuum seal and freeze.Does eggplant do ok being froze,and then thawed out ? Anyone ?

  • Chef,thanx for this wonderful recipe..I've been trying out most of your recipes and they have all been awesome..However, I had some questions in mind...Can I pre-make the powder and store it for subsequent use?As oil is added will the powder get rancid?Can I cook the stuffed eggplant in oven instead of stove top? I guess,this will alleviate my problem of having to turn the eggplant again and again and also cook it uniformly..I would appreciate if you could answer my queries...Thank you

  • yes you can keep it for a long time , just roast them dry with out oil , and even with oil you can keep in fridge for a 3-4 months
