the one on the left is the clutch. Hes not using it to change up through the gears but he uses it on downshifts to get more control of the throttle. (note the blipping on the throttle pedal mid corner to keep to revs up)
I had no idea these guys had to rev up on the down shifts, that must make the driving experience even more of a handful than if you didn't have to. Wow!

Is that pedal in the middle that he is pressing to work the back brakes or something?
When he brakes he pushes both of those pedals down, the middle one looks like it definitely connects to some kind of line.
