The story behind HYHU being Fish's theme is the fact one day a long time ago, he said he hated that song. So naturally, it became his theme song. Its not like he's going to walk out on the show. He has nothing against Argent, the band that did the original song, but he just hates the song. So Trey, Mike and Page torment him by playing it. They figure its funny.

I met Mimi on this tour-- she approached me walking down the street on campus when they played Rec Hall at PSU (she was an alum). I was wearing my Phish rainbow logo t-shirt and she wanted to know how I liked the show the night before.  She was without a doubt Fish's biggest fan.. She just gushed about him-- and all of them. I gave her a hug and went on my way. I'll never forget it. :-)

3.0 Phish is 100x better structured than this "good ol" Phish you speak of. Adversely, these years did seem more of an environment for tripping as it was like a circus and LESS ABOUT THE MUSIC. However, if we speak in terms of quality of music and improvisation... 3.0 is the best yet and if you argue that I'd need some proof. My proof is seeing them live 30+ times in 2009/10. Phish is still blowing minds daily, believe that.
