  • Thank You Manjula Aunty! I am a thirty years old guy from Pakistan. Naan khatai has been my favourite cookie and I always wondered how it's made. Then finally, I'm really glad I found You here. It's fantastic, You made it look so simple and easy. I did try it today but it was that easy to make it for me as it looked, obviously because I have no baking experience whatsoever. The Dough turned out to be a little more sticky and I had to use some whole wheat flour in the end to make it firm.

  • Hi aunty, your recipe is very good. But as u said that we need to preheat the oven upto 350 c, but in my oven the maximum temp is 250 c. So, how can i adjust it?

  • Hi Manjula ji, I m a greate fan of ur cooking, I tried to prepare it. I preheated oven at 375 degree, but when i put naankhatai in oven, after 7-8 min. naankhatai starts burning from bottom side. And naankhatai does not look prepared from the top side.

    What should i do. Please suggest me.

  • @yojnarastogi Hey Yojna if you are using a oven with Celsius temp setting then set your temperature 190 Celsius (the equivalent of 375 Fahrenheit). If that is not the case then reduce the temp and place the baking sheet closer to the top of the oven.

  • Hello Mrs.Manjula, i backed the nankatai but afer baking it bacame powder as we start touching i dont know what went wrong can we subsititude butter with dalda? do we have to use slightly roasted suji and gramflour?

  • @chandrikahatti she is using a Fahrenheit temp scale in the video. Set your oven to 190 Celsius (its the same as 375 Fahrenheit) and you will be fine

  • Good morning Manjula. I tried to make your nan katai biscuits yesterday. It took a while but the results were great. I doubled the amount. I also tried a few slightly different versions based on VahChef's recipe too, by adding cocoa powder and a touch of milk to make cocoa versions, and also adding more almonds and pistachio in the main biscuit mix in addition to the garnish on top. The biscuits need to be fairly spaced apart on the baking tray to allow for expansion. Thanks for posting:)

  • 375 degrees fahrenheit is 190 degree celsius. Gas mark 5. Moderately hot.

    half a cup of butter in this recipe equals to 113.4g or 4oz or 8 tablespoons of butter

  • @kokonutbaby1 : This is not Graham flour, but gram flour also known as chickpea flour... and semolina is nothing but coarse wheat... you can find them in any indian/pakistani or asian store

    If you are using ghee use about teaspoon less and make sure ghee is not melted.

  • @queenbunny76 Its also called Chickpea Flour or "Besan " In Hindi n is available from all Indian grocery stores.Also buy the fine ground version as some places have a coarser ground, not suitable for this recipe.Hope it helps.

  • @ostwaltwinkle Hi, sorry cudn't help answering ur questions.Baking powder n Soda bi carb is diff.Soda bi carb is also called baking soda.SO make sure u use what the recipe says.Also the temp in USA is in Fahrenheit.SO it is 375 degree fahrenheit.WHen converted to degree celisius, its about 190.Tht's the temp u shud use in ur oven.375 celsius will burn food rt away.So it does not exist on our ovens where celsius is used.

  • your cookies was good looking. one day i start to make this cookies but, i could not understand what was the seconed flour you show after semolin. so i did it with out it just to see if it will works. You know what happened after backing i put all in garbage.

  • Does sooji or semolina ever go bad....like if its been sitting in your pantry for a long while...anyone???

  • @indiangirl1976 Yes Sooji can go bad if its got moisture or anything in it or is kept for a very long time. It even emits stale smell after storing for very long.

    But when i made nankhatai.. my all cookies got spread on the sheet.. when i took it out of the oven it was one single thin layer on the sheet.. what could be the reason?... the oven temperature or I might have over whipped it?

  • what i like about u is that u take the time to make every single,individual cookie your self. Especially when u made gol gapas, u could have used a cookie cutter but u individually used a small rolling pin. ur the best

  • I made this today and had it with a Chai recipe from Suvir Saran's cookbook. Although teh cookies turned out good, they did not quite taste or look like the (domed) Nan Khatai of my childhood made by my father. Is there some sort of acidic ingredient that needs to go in to make them domed? or salt? You said above that "you will taste salt" but i do not see any reference to salt. Please help. Please keep uo the great work. I am very happy with these.

  • Manjulaji, the oven shud be preheated to 375 degrees C or Farenheit?

  • It'll, of course, be in Fahrenheit. If it is in Centigrade, the Nan Khatai will be very charred, so Nan left to eat ;-)

  • Is there a substitute for gram flour? I have not been able to find it in the stores in my city. I have read many recipes that call for it and am so far disappointed in my search for this ingredient. Any suggestions would be appreciated.

  • Could make your own by grinding dry chickpeas in a blender, but that would be really hard on the machine. All I can think of doing is adding something very sticky, she uses it for an egg replacer, you could honestly add an egg and half as much all purp flour as besan. I'm a vegan and I don't want to make Manjula mad, but an egg would be about the only thing that could do the trick.

I was searching for a simple egg less recipe for todays Raksha Bandhan function.   • jam ,:) just a little bit of dark red gooey jam .its perfact ,in pakistan they use just a spot of jam on nan khatais.

  • Hello...I tried out this recipe today but the biscuits turned out to be too soft and were breaking when I was trying to take them out of the sheet....the taste was wonderful though...how can I make sure that I get the right texture?

  • 1. leave them on sheet for 30 mins to cool down before removing.

    2. remove from sheet b sliding off movement.

    I tried your recipe but unfortunately turned out to be disastrous. Looks like butter was too much perhaps; i had a bar of butter of 500 gms. I used little less than 2/3rds of it. I had to add lots of fluors again to make it a stiffer dough. after 5 mins of baking it bacame almost flat and all pieces stuck to one another and was a big single pc. at the end. Can you suggest what kud have gone wrong?

  • you need 112 grams of butter. Also make sure that your cookie sheet is thick, I think.

  • I think the cookie sheet you are using it is very light so cover the cookie sheet with a foil that should help.
