Already to much effort for me. I never cook. If I want to eat healthy I just buy some packed salad and some dressing and mix them together and so far I'm still alive. @JoeHell67 Hi Joe, You don't need a lot of oil for this recipe.. basically, you just need enough to brown the Panko. If you turn over the fish and you see the Panko is not cooking evenly, then you can add a little more oil. We don't want the fish to get too greasy... it's more healthy with less oil. Frying chicken with potato starch is wonderful. It is very light and crispy. It is even better when you remove the bones and then cut the chicken into small bite sized pieces before frying it.

No, silly, the fish wasn't that heavy. It was only about half a pound of sole fish, but when you lift something heavy, you should try to keep the weight over your feet and then lift with your legs, not your back.

Why did you go with potato starch as opposed to something like wheat, arrowroot, or tapioca flour?

Potato starch is lighter than wheat flour but can help keep the fish tender. It give it just enough lightness and crunchiness without being heavy and greasy after frying. I don't know much about the tapioca or arrowroot. You can try that and tell me how it works good or not. Thanks for your question!
