This is actually pretty common in real life too: once you know how a thing works on the body had know it's chemical composition you have a much greater ability to manufacture something that works against it, and this is true even of chemical weapons.

The main problem with it is that real chemical weapons, stuff like TX gas or other manufactured super-toxins is that you're dead so fast there's no time for an antidote to work.

Thankfully in the RE series this is not the case.
