Alton Brown is the only Los Angeleno I know who claims to be a Southerner. Got news for you, Alton - Graduating from UGA's drama dept. does not make you from the South. Especially since you went to culinary school in the northeast. Piss on yur greens, Yankee.
Scotch is not always aged in smoked sherry barrels. Some is, but the vast majority of scotch, even the expensive single malts are aged in bourbon barrels.
I'm the odd man out, I guess - I eat my collards just lightly steamed (and dressed with butter, salt and pepper) and I leave the stems left on. Then again, I like something with a good chew to it. Back when I was growing my own, hubby and I ate enough collards that they made fun of him at the local blood bank because his plasma came out green (normally only happens to women taking birth control, because of the dye in the pills, lol)
This show finally helped me (a through-and-through yankee) find out what the hell a "Collard Green" is.

He just knows one's salt, one's sugar, and just puts one tsp. of both.

Actually, Kosher salt is coarsely ground, so it looks different from sugar (in anything other than a YouTube video, that is).
