i had the pleasure of going to the DFO last weekend where they had 3 of these baby's! i love em, and really want one marcel/skutt did great work. however i noticed that the large Guillotine door was left about 3/4 of an inch open on all of them!?!?! perhaps the counterweight on the door is a little back heavy? however it is important to note that they didn't seem to have a problem holding temp even tho the heat seal was broken.
