The outer layer of the sea cucumber is actually very good to eat. I have made soup and stir fried with it before. To clean the skin, you have to shake salt on it and keep on rubbing it until it forms and then rinse it in cold water. When it doesn't foam anymore more, then it's clean. Other wise, it will be very bitter. It take about 5-7 minutes to clean one animal. That's why I rather eat just the meat.

Do you make the sea cucumber eject its internals before bagging it? I'm looking at starting to take sea cucumbers but don't want to have to swim around with a sticky mess.

If you keep it in the refrigerator, it will keep up to a week. But I usually eat the meat in a day or two. It taste better when it's fresher!

That meat under the muscles is the membrance. It is edible, but a little bit bitter.
