I think he's trying to make this a different way for people seeking alternatives for losing weight. I'm puerto rican, too, but this would be a great way to make it for me without the white rice, jarred sofrito, and stuff that I should be avoiding :)
One again a delicious looking recipe, i was just wondering if i can use a regular onion, as we dont have spanish onions here, also can i omit the wine? and can i use skinless chicken breasts instead?

Can't you cook the rice first otherwise the nutrition from the vegetables is cooked out

I have never been a big capers fan. I do love olives but have never used it in this recipe.
