  • @crispyisme While I agree, most don't prep and only have a few days/weeks worth of food there is no proof that if the S where to HTF it would be so bad and as you put it "prolong the inevitable". It could last a few weeks, months or years but unless it is a global killer don't see any disaster worthy of simply walking into the shed or forest to put yourself out of your misery.

    Just like the bear, the more body mass that you can store, the longer you can survive on less later...

  • i do same thing with goose breast.

    i put a beef bullion cube in bottom, stuff in the VERY lean meat, and add teaspoon of Hawai'ian sea salt, then top off with water.

    we figure it'll be good for 2+years.

    for storage, it is good idea to put them in cardboard divided boxes as a bit of protection from jar breakage.

We love the canned whole chickens [on small side, but delish] so I'd LOVE to be able to can my own meats.   • @000Winter000 As I recall they were canned with a pressure canner and had some sort of syrup added. They were fully cooked during the baking process and tasted great. I'm sure it helps that they were stored in nearly complete darkness and cool temperatures in the cellar.

  • Eeep, I think giving all the meat to the dogs sends the wrong message, you didnt really act like like it was still good. Also note that dogs will eat any kind of meat, even roadkill, with that said I dont think they are the best taste testers. xD

    I would have to say that the meat will be good for maybe 5 years, most canned goods last between 5 to 10 years. I dont know what difference you have with your process, but they should all act the same.

  • @dsarti1 There is a huge difference between factory canning and home canning. Home canned meat sounds really risky. Part of this guy's point canning your own meet can be safe. He doesn't say it, but I bet it could even be a better way to save meat that could get freezer burn.

  • @BuranLyoko There isn't a huge difference at all actually. You can do everything they do at the factory in your own home, AND have substantially more control over sanitation than factories do. I know people who have done this for over 50 years and have never once, not ONCE have they ever had a jar go bad. And that's because they do it right. Much like this guy. This guy knows what he's doing. If he didn't, he'd be fucking dead by now. Obviously this is not for the amateur idiot.

  • @dsarti1 MsJojo is referring to HOME CANNED meats/vegs. The SEAL on home canned is rubber, and not as reliable as a sealed metal can, like on tuna or spam. (you can however get a set up to use the metal cans at home). Also, even if the seal holds, cannot smell or taste botulism, and it is deadly. That is why recommended to boil for 10 minutes out of the jar.

  • @MsJojo540 You need to call the extension office, and/or consult the Ball Blue Book. After 2 or 3 years or so the nutritional value degrades some like commercial metal canned, but it is no big deal. If the seal is good and there is good vacuum, it is safe.

    The internet is full of armchair experts, it and it's advice need to be taken with a grain of salt. Did you see how rural this guy is? Eating home canned food is not new to him I suspect. Do it right and it lasts.

  • If ya gotta half a beef, elk, whatever lots of it, and a loss of power threatens it, salt peter, and non iodized salt in brine can quickly preserve hundreds of pounds for weeks without refrigeration. Just take the top off a common plastic 55 gal barrel with a skill saw by rolling barrel as you go, throw it all in there and add water. Salt peter works best, but without salt peter, sugar, brown sugar, and salt combination or alone can work and buy you time to preserve it or eat it. Read up.

  • Kosher or plain salt is better for canning. Iodized salt will cause a color change, and possibly a taste change as well.

  • This uncertainty about pressure cooking and possible food poisoning has me going in the direction of buying freeze dried food from Mountain House. They have freeze dried meat entrees.

  • Nice video, thank you. In case you have not heard, there is also "meat potting" (usually done with pork).

    The idea is to cook pork in thin strips and store the meat in a sterilized (in boiling water) pot, with alternating layers of fat, pork, fat, pork. I have not tried potting but those who have done potting say that the meat can stay good for a year.

    I have stored cooked and strained fat in a jar and it has kept for 6+ months.

  • I have a good idea, why not make your meat loaf recipe in those jars and then when you go to use it , you can have a side of rice or instant potatoes and beans. Now thats a meal!

  • I didn't realize that you can can meat. I would have cooked the meat again before I did a taste test...just to make sure that you killed any potential bacteria.

  • If you opened up a jar of meat that had botulism....IF you recooked it again at high temperatures....would that not kill the botulism and make it edible???

  • @johnny102marvin No comrade, with botulism it is the toxin that kills not the bacteria itself. Toxins cant be destroyed by cooking. The botulism toxin is one of the strongest toxins on this planet.

    Clostridium botulinum is only really a problem when you don't treat the food properly. If ever in doubt, toss it out. Pressure cooking fresh food sterilizes it of all life. No living organism can take 10 PSI at 121C, not even spores. There is no need to fear so long as you process properly.

    Know it or not, you're spreading misinformation mate.. Botulism toxoids are like almost any other organic protein based toxin. They are destroyed by heat. Cooking canned foods to a minimum temperature of 90ºC for 10 minutes ensures it's safely free of toxins. However, canning foods require higher temperatures to kill the spores. While the pressure isn't important, it's a key component to obtaining the high temperatures needed and pressure settings alone cannot guarantee that.

  • Not really sure but the canning salt my cranny and great granny and great great granny used was not Iodized.... If something is not broken I see no reason to fix it

  • @AbdMalil1 i was told that the only difference between canning salt and reg salt is that its cleaner and keeps the pickles or whatever from getting foggy.... they recommend not using kosher salt tho cause its bigger granules can make you wind up useing too much or too little salt
