Select the spade tool then right-click on the trees to erase them (it costs about £12 per tree).

while you are constructing paths, scenery or rides, you can just right click on a tree to get rid of it.

I built a coaster called "Shuttle Loop" in the steel rollercoaster type I think. Just modifiy the take-off speed. Try 'Leafy Lake' and you can build it quite quickly.
