  • Hi Alia, I m from Pakistan, and maakouda is a very popular dish in our country witht the name of potato cutlets. I usually use bread crumbs instead of cornflour. some times I add little quantity of mayonnaise in it. If feels really good that in our Muslim countries we have some common dishes with little bit change of spices and style. Anyway, love for you and all muslims brethren in Morroco ...from Pakistan ;)

  • Hello Alia. I'm originally from Algeria, tlemcen. Because it's next to the border with oujda, my family and I combine Algerian and Moroccan flavours. In tlemcen, we use the same recipe but we add curcuma . You should try to add it in your recipe, you will love it :-) Take care and keep on the good work

  • @92sumsum yah, but baking it will make it too dry inside, this potato chop is hard outside and soft inside. You get me right? However if you add chess to it then bake it, it will be a fantastic dish I tell you!!

  • Hello Alia, I love your recipes and learned alot from you. I married a man from Algeria and they have lots of the same food. But I have 1 question, is there an other name for the herp salentro? that you use with the maakouda. Greatings from the netherlands and please do'nt stop cooking .

  • @2104maryam the other English name for cilantro is coriander. You find it everywhere in the green grocery stores next to fresh parsley. In fact, they very much look the same. so make sure u dont get parsley instead of cilantro/coriander

  • It's not about potato cakes at all Janeways...it's about a deep seated hate between Algeria and Morocco. When I was in Algerie I found the same type of sour Algerians as this woman and couldn't wait to get out. When I go to Morocco, the ppl are sweet and smiling like Alia and wish I never had to leave. Just because they're in Mahgrebi doesn't mean they are the same, no more than Mexican and American is. This Algerian gives very poor impression of his/her country by making petty comments

  • @meetorite1 I agree with you somewhat, but in all of my personal experiences with people from both nations, I have to say that I have yet to experience any negativity from Moroccans. As you said, they are incredibly warm and sweet people, always smiling and friendly. Sadly, the nastiness, jealousy and rudeness that's coming from this Algerian woman has been my normal experience in dealing with Algerians in general but especially in regard to anything pertaining to Morocco.

    i ate in a sandwich since i was a kid, does that make me algerian? no!

    bottom line, this is Maghrebi cuisine, not entitled to only one cuisine as once upon a time there was only one territory, n am sure u know dat.

    close mindedness doesnt take us very far.

  • @illyjaan : I know that some moroccans ate it in a sandwich when kids as my best friend who is a moroccan from Meknes used to as well. But ma'akuda is only known in some regions in Morocco (my husband and his family in casablanca did not know it).

I know that moroccans hates it when they're said moroccan cuisine has been influenced by other countries but let me tell you something: it has been influenced by Turkish, jewish, spanish and algerian cuisine.

  • I am married with a moroccan and I know that this cuisine is really rich and diverse (I am very fond of this cuisine and I learn it everyday with my mother in law and with internet) so no need to copy other countries' disches and call them moroccan. This is not fair for the other countries!

    But please don't call this dish Moroccan patties: you may find ma'akuda in Morocco but this dish is definitely an algerian dish! I saw the Moroccan tortilla it really look like the tunisian tajine as well.

  • Alia! In some places in Casablanca Maakouda is called Pastila ( with a P) not to be confused with Bastila

  • Maakouda is an Algerian recipe. We only put parsley in it and usually have it as a starter with a soupe!

  • food that makes you feel happy and at home, like traditional foods your mother or grandmother would cook for you. By the way, next time you ask a question, try to be more respectful...there are other ways to say "food that makes you fat".

  • I made these last night and they were really good. I didn't put enough salt which was my fault, but the combo of flavors and texture was delicious.

    Next time I might add some hot chili pepper.

    The great thing about Alia's recipes is that when she comes out with something new, I never need to run out to the grocery store for special items, because I have everything right there in my kitchen.

    I love the simplicity and it actually tastes good.
