  • I think the dal is called Arhar Dal. I lacked hing , curry leaves and dry chilli - and added sugar and tomato puree, but it still worked! Getting the garlic in there early is definitely the real deal. Had with roti. Finger licking good!

  • lacked a few ingredients, but boy where you right! yummed it up. Great improv with the cucumber.

Thanks to Youtube also. Just today i did Kadai Bhendi and belive me it was mind blowing. My wife liked it like anything.

  • This recipe is amazing. I can get the real thing (dosakai) in a local grocer.

    I love when he says he likes to add a small piece of butter, then adds a pretty big chunk...then as an afterthought, without saying a word, he continues to add in the rest...a bigger piece than the first...excellent !

    does anyone know what dosakai is called in english because i have seen my relatives also use the world dosakai for a ripe sweet fleshy fruit that is not unlike kharbooja....so i am a bit confused. is that a different fruit or the same thing when it is riper?

    Tried out this dal today with the aubergine fry (Bengali style. The dal came out pretty ok.Guess the orange colored cucumber/squash will be a better bet than the regular cucumber.

    Chef.. Could you share some authentic Andhra and Rajasthani recipes?

  • this is good one ..although I would not like to add water while sauting the cucumbers .. cucumber contains lot of water .. and I THINK adding water at that point of time some how makes the spices effect little dull !!

    you can cook toor dal without cucumber and tomato and make it dry with rest of ingredients in butter, drain the water from dal after cooked the way you have cooked, but each piece of dal should remain whole but well-cooked.

    than make a curry (Kadhi)with yogurt and besan, masala and ghee.

    Top "suki-dal" on plain rice dish and served with hot kadhi in the bowl!!
