I'm wondering if the two part silicon putty put over a flexible armature would work for you. I use AlleyGoop from ClayAlley, there's other brands, but it is flexible after it sets. If it's flexible enough to get clay out of molds then it stands to reason that using it over a movable armature could be useful. It's worth a small experiment to see if it works.
Polymer clay is not a good medium for stop motion because, as you said, it does crack. That happens because the plasticizers gravitate downward after a while if not heat set.
Making a figure with polymer clay, heat set it, make a mold of that with a two part silicon putty, then using foam latex is what some friends of mine are experimenting with in LA for a stop motion project. Check stopmotionanimation (dot)com for details on how to do this.
The hair is made from solid polymer clay mixed with liquid polymer clay. Mix it to a consistency of cake frosting and style the hair.
As for the speed of the video, it was a "snag it" from a live webcam demo done in Yahoo Messenger, sent to me as avi files, without sound. I added captions on some with Movie Magic and uploaded it here.
I didn't use sound on the demos because some of my students are deaf, some are not English speakers, and my family is noisy in the background.
