  • Stop holding the oysters in your hand when you shuck. Place it on the towel and leave it there till your done. Learn this technique and you can get rid of the mesh glove.

  • They forgot to throw the first water. You get rid of it, let it rest 1-2 minutes and the oyster will make more water from itself, cleaner and better-tasting.

  • I'm still terrible at this, I end up with a ton of flaked shells and no way to get the knife in that little bastard

    Cuz he's doing it wrong.

    When you place the knife in the hinge wrigle it from side to side a bit, going with the blade. Dont twist.

    When the knife is firmly in the hinge, twist gently and the top should pop off.

    You wont get those shitty flakes of shell like this guy.

  • It looks like the knife bent a bit when he twisted...one reason I hate oyster knives. They aren't strong enough to really take a good twisting. I've been through three oyster knives already. Personally, I've had more success with a thick handled, flat head screwdriver with a nice, wide wedge.

  • @saprater25 It looks like the blade bent because he's actually using a clam shucking knife (flat thin blade, no angled tip... you don't use the tip when shucking clams) there are other styles of oyster knives available if you don't like the classic one. Try one of the oyster knifes that has a blade which is wider than it is long, Do a google images search for "wusthoff oyster knife" to see what I mean. They'll give you plenty of leverage and won't bust up the shell like a screwdriver will.

  • @bigchefandy Thanks. A little after I posted about the screwdriver, I did an internet search and found a couple of sites dedicated to oyster knives. Gotta love the internet, LOL. Settled on a nice little knife with an angled tip by Dexter-Russell. Can't believe the difference. The ones I'd used before were made from aluminum foil in comparison. Even the toughest oysters that I literally have to wrangle don't leave a mark. You were right...a huge improvement.

  • @morgan2993 It's a special kind of knife only used for shucking oysters. Conveniently named as an 'oyster shucker' or an 'oyster knife'.
