Yeah, at 4:40 and 4:54 I experienced glitches. I've since sold the PS3 version and got the PC version and I've experienced no problems whatsoever. Must be a PS3 thing.
It's in the game itself. Press pause while playing Just Cause 2, and there's an option called video capture. You can catch up to 10 minutes of video and upload to Youtube or save to your HDD. This isn't available in the 360 or PC versions.

There is a built-in feature called "Upload to Youtube". Pretty self explanatory. Press start and then go to video capture.
