The CO2 is in a large, refillable canister. the canister is a high pressure system and when the CO2 is compressed, it turns into liquid and when released, turns into a gas. I'm sure everyone has seen the helium canisters at some point in their life. Or a soda fountain system. The change of state makes it cold.
These CO2 systems were originally designed as a fire suppressant system for electrical rooms (server farms, telecomm rooms). They replaced Halon systems which depleted the ozone layer.
if you dont like the Co2 canisters, dont go to the club, there are people there who do.
