In North Dakota the paddle fish help themselves by the roe being donated when they are kept. The roe is then sold and the proceeds go to conservation of the Paddle fish. There are very strict regs on paddlefish and if you fish during the season to keep them you must keep the first fish you snag and then you are done!

Cut head and tail off.Where The fish gets about 4 inches around use electric knife cut to gristle around the spine then raise up 1/2" above spine then cut it the length of the fish put it on table skin side down. Cut the meat just above the red meat cut the white meat away leaving 1 inch thick slab of red meat and skin on the table. Trim any red meat off. Soak the white meat in salt water for 2 hrs do not use hot water. Rinse fish and they are ready to cook.
dont u take the head off and pull the spine out or something i from cleveland ohio and we go to st louis missouri every easter to snag in the mississippi river snagging always just gave the paddlefish away to some1 else cuz we dont know how to cook it

What bait do you use? A big #10 or 12 treble hook and a good sized weight. You snag Spoonbills/Paddlefish.
