Lucuma is a highland sapote species (pouteria obovata), very closely related to mamey and canistel. Lucuma naturally has very dry flesh, and so traditionally it is dried.

Lúcuma isn't from de Andes of Perú? In fact in my country, Peru, Lúcuma Ice cream is very popular, probably the best flavors of all. Thanks for sharing.

shockthesky - it helps to first grind your nuts in to a powder, then place in your blender when using less powerful blenders. :)

I found the navitas yacon on vitacost, which is where i buy a lot of my raw goodies. they have fair shipping and excellent service, and I always save gobs of money.They don't seem to carry Lucuma however. :(

yacon syrup is like agave, won't dry well in dehydrator

yacon is safe for people with candida. it is NOT food for candida like other sweeteners, and it promotes healthy intestinal flora.
