  • @you2besux he always used to say it instead of letting the intro say it for him...he quit doing it around season 7 or so I think it was.. think I commented on the first video I saw where he DIDN'T say it :)

  • I love Alton Brown and this episode was a turning point in my enthusiasm about the show. I had just started making an effort to see it and was excited about the show, but the Mayo episode took me from watcher to fan. I realized that if there was a guy who could humorously explain how to make Mayo while conveying the historical importance of the mayonnaise culture, all while making a very simple recipe in a simple yet exacting and precise way. This level of attention to detail is in every episode

  • Hmm, thumbtacks in the utensils drawer ...alton's food just got a wee bit less appetizing.

  • Ok, now I have to share a little recipe for a homemade lava lamp (one use only). Pour some water into a cup and dye it whatever color you wish. Next, pour some oil on top. After letting any separation occur, bust out the salt shaker. Add enough salt to weight down the oil. The salt drags oil bubbles both large and small down through the colored water slowly. They will then rise back up to the top.

    Cool stuff.

  • I used grapeseed oil for this and it tasted better than both corn and safflower.

  • get a cheap metal handle whisk, use a bolt cutter to get rid of the ring on the end of the handle and put it in teh end of your drill....

  • I didn't have any lemon juice, or sugar, or a whisk but I tried anyway. I even forgot to just use the yolk. I just used 2 tbs vinegar, 2 whole eggs, 1/4 tsp salt, a few grinds of black pepper, lberal shake or 2 or 3 of garlic powder and 1 cup of oil. Using a blender I whisked up all but the oil til frothy then I put the blender on slow speed (theres a removable cap on it so you can drizzle the oil in while its blending.) After I had put in about 1/2 the oil I could hear it was getting thick!

  • this was the first episode i saw, i really want to try to make some homemade mayo because the stuff out of a jar really isnt that tasty, but i love the mayo you can get at a deli.

  • Great job on the props. Looks like it must've took a long time to put all of those tacks in all of those Styrofoam balls.

  • What a fun, well done video! I love the "Mr. Wizard" approach...informative, goofy, and entertaining. Great props and great production! Shirley's accent and speech tempo sound exactly like a female version of the narrator of the "tour video" segment in the movie Jurassic Park.

  • I think the beginning of this video is meant to show how awesome homemade mayo is, personally I could not imagine making a mayo sandwich from store bought mayo.

  • OMGOSH! This is the first time I think he EVER said to use non-kosher salt! please wait till my spass attack ends...*flails around on the floor* I'm good.

  • Not the first time, but they don't happen too often. Sometimes you need something finer (yes, like table salt).

  • Kosher salt is an excellent cooking salt, but Alton has pointed out several dishes in which it's either unnecessary or even less desirable than finer salt. He makes his omelet with fine salt because there isn't enough time and water for kosher salt to dissolve.
