I'm not really sure how long it will keep. I usually eat it within a couple weeks, and I just keep it in a jar in the cupboard. Probably if you were going to keep it any longer than that, I'd say put it in the fridge. As for the total shelf life....I do not know. Sorry!
No, you don't have to use oil. If you have the patience to keep working the almonds, they will eventually release their own oil and you can make almond butter without adding anything else. Too much work for me, plus I like the taste of the coconut oil. :)

To me, it doesn't alter the taste. I really like it with the coconut oil. It gives it just a little bit of sweetness, but doesn't overpower the almond flavor.
Actually, for this recipe I just used raw almonds that had not been soaked. I tried it both ways and found that it blended better if they were not soaked and dehydrated first. But, that's just me....it may work better for you! Wouldn't hurt to try. :)
