In my opinion, I reckon that they could've kept the CB1 Rule; (In order to claim Gems, you must not die once and collect all crates). But they changed it when they made the next 2 games, because it was hard to not die. Its more of a challenge really.

Crash Bandicoot today is one of the examples why I don't really like the technology out these days.

Theres the iPod, the PS2, the PS3 and all the HD movies and realistic games, but there are some things that are better to me in the '90s than today.

I'm unsure if you understand exactly what Edgehead Crash meant. I believe that he meant that although the technology now is "better" in that it has more cababilities and is vastly more powerful than old technology, older technology had a larger amount of more-enjoyable games. It's obvious that the PS1 is less-powerful than the PS3, but it doesn't mean that the games are worse, as the PS3 has some atrocious shit, among its awesome.

...Also, realism in games does not substitute for fun.

These jet pack levels are not only boring to play, they're also quite boring to watch (no offence - hardly your fault, after all). As you say, they're not difficult, but I find them very frustrating and end up taking them very slowly to make sure I only have to make one attempt.
