I think all he used was sand (you could more than likely get it from a craft store like Hobby Lobby) and a toothpick to make the birds. I'd think that maybe even a really sharp pencil you could use to make birds.

Ok....sorry for being that way, but I was just making a suggestion to what it was. And your right, its not easy AT ALL. You have to be more careful and steady than they make it look. I also was looking at the video because I also thought it looked interesting. Sorry, I misunderstood you.
