  • I have tried Chimay Red for the first time and it is good. I got a bottle of it for free in exchange for cleaning the windows at a store that sells all three varieties.

  • IMHO this is the pinnacle of Catholicism. I imagine the first monk brewer was like "it's what Christ would have wanted".

  • Awesome beers!

    I do my own all grain brewing, and have a belgian strong dark ale fermenting at the moment, its a big beer, with OG 1090, and i used a westmalle strain of liquid yeast.

    I will also be feeding the beer with belgian dark candi sugar after day 8, and using a champagne yeast to finish off the brew. Hopefully it will come into the 15-20% alc area. A massive, almost sipping beer at that strength, and one i will age for at least 12 months in champagne bottles before sampling. Cheers.

  • Chimay beers really are a belgian pride. I use chimay blue in rabbit or beef stew with dried plum it always give an extraordinary taste to the dish!

    Think I like white and red the best. Blue is a bit too sweet for me.

    I absolutely love the smell of the yeast in these beers. Such a wonderful complex taste.

  • I tried Chimay for the first time and WOW! I would not consider myself a big beer drinker, but I had two pints and the buttery finish and high alcohol content is stellar. I pay about $10.00 for the big bottle in Idaho, but you get about 2 pints out of a big bottle. Now all I think about is Chimay.

  • I absolutely love any Chimay beer. It gets no better than this stuff. I drink the Blue most often these days, but I've tried them all and each has it's own destinctive traits. And all are, of course, fantastic.

  • I first tried Chimay back in the 80s. I haven't drunk it much since then, but I allways remembered.

    The trappisten beer is the best beer in Europe anyway, and the blue Chimay is about as good as it can get. You should try it soon.

  • I tried Chimay for the first time 3 weeks ago. I must say that it is the best beer I have ever had. I have some high quality ales that I like and good nitro brews I like, but have never had anything like this.

    I only tried the red label so far. I just bought the red label tonight and will be trying it this weekend.

    The best part is how and who makes this brew. Could not be more perfect!!

  • I'm actually drinking the blue as I type this :) I guess I can consider myself lucky to have a liquor store 2 minutes away that sells all three and another one 10 minutes away in Annapolis...can't find magnum size bottles though, just 750s. Blue has to be my favorite but you can't go wrong with any of them.

    One downside to trappist beer, it's hard to go back to other styles.... They all make me wish I was drinking a chimay!

  • It's my experience that the very bottom of a Chimay bottle holds cloudy yeasty matter that kicks your butt. That's why I love it so much.

  • The monks principle duty may be the quest for god, but my principle duty is the quest for beer. I must admit, I've done a good job. Hiccup.

  • I swear... I'd live there and muck horse stalls, compile cow patties and clean toilets as long as they paid me in beer. I recently had the joy of discovering Chimay, all three of the available types (Premiere, Cinq Cents, and Grande Reserve) I personally prefer the Cinq Cents as it seems a balance between the other two...but they all are spectacular beers. I now see the mass marketed American "beer" for the shame that it is.

  • Silly me! The Chimay Rouge (Red label) is also called Première. I realized this when I bought a few of the 750ml bottles recently.

  • i just wanted to find a grande reserve bottle but never found one, shame, even the small bottle ones are hard to come by here in my area/country :( oh and only the 750ml bottle says premiere the 330ml only as a red label with the normal inscriptions, accordingly the 750ml bottles are Premiere(red label), cinq cents(yellow label), grande reverve(blue label)

  • @tribunalfunk there are a lot of other beers for a fraction of the price I see Chimay on the shelf in the Bay Area (Czech and Belgian). I could recommend a few, I think there's just a lot of hype with Chimay lately

  • Chimay. Een van mijn favorieten. Ik drink er meestal wel een of meer als ik uit ga. Het is een bier wat men rustig moet drinken terwijl je nadenkt en het bijna als wijn over je tong en gehemelte laat glijden.
