  • Ceviche is w/ "C". 1)Do NOT use jalapenos, peruvian chiles r MIRASOL & LIMA, look for them @ intrntn'l markets. 2)Jalapenos have a completely different taste, eventhough they look similar 3)marinate fish & onions w/the lime juice that must have minced garlic & ginger, salt, peruvian chiles (minced & in small pieces) & few cilantro. 4)FORGET the fridge for 8 hrs, it should be marinated for half hour or depending on the amount of fish used, check the pieces of fish until u get the whitish color

  • this one isn't the real peruvian ceviche recipe. maybe this guy has to go to Peru to learn and teach the real peruvian ceviche . We never ever put oil neither tomato in a ceviche and to put eight hours in the refrigerator isn't the real thing we use to eat a fresh fish from the ocean to the plate . the ceviche is like a carpaccio it takes about 20 minutes marinating the fish in lime juice. and the spicy peppers different than jalapenos. the ceviche this cheff showed is likely a mexican ceviche.

  • lol my girlfriend is peruvian and she would have laughed at this. Ive tasted peruvian ceviche first hand and i do not recall any olive oil (something lighter like canola would be better) there definately wasnt any tomatoes or jalapeños. Cilantro is a nice touch however, would definately complement the lime flavour.

  • jalapeños?!?!! we dont even have those in Peru. you should never let the fish sit in the lime juice for more than 5 to 7 minutes, it should be almost raw that is how you appreciate the freshness of the fish. this guy has no idea what he is doing or talking about. As a Peruvian chef in the US I am apalled to see this specially coming from the CIA. also keep the tomatoes away.

  • The worst is to let the fish marinade for 8 hours in the fridge. That is so so SOOOOOO BAD!!! The other ones are: it is not made with jalapenos, you should never put olive oil and vinegar(that is also sooooooooooooooooooo bad!!!!!!!), you do not serve it with tomatoes, the onion is red and in julianne cut and the citric is PERUVIAN LEMON.

  • @mickymocko I agree and disagree,  surely every family does it differently there's als gonnabe slight changes to the recipe, You can put cilantro in your ceviche its quite nice, we put in rocoto (peruvian peppers) instead of jalapeños, also we have it with boiled rice as a side and add sweetcorn as well, defo dont leave marinatin for 8 hours thats just ridiculous! Ive had it with tomato as well, but defo no vinegar or oil. Oh and I am also peruvian.

  • the same day u fished it so its fresh, after u have to use a lot of lemon for the sauce with SALT u never used salt and thats the basis of the seviche with the lemon and mixed it with garlic and black pepper and some stuff we call here "Ajinomoto" that its a sazonador idk how u say that in english, later u put the rocoto molido or the other one and put some corn with "pop corn cerrano" and onion, if u want u can put lettuce and sweet potato and there u have it a REAL PERUVIAN SEVICHE

  • You can use a dash of milk to make some "texture " of course is just a way to get the "leche de tigre".. or without this little dash. Ajinomoto is opcional too.. and "el callao" some people use cilantro ..just a little bit.. and in the north coast use.. "Chifles" ( fried green banana)like a company .. but the typical is just garlic , chili , salt lemon onion and fish ... but this video sucks!!!!

  • Las primeras cronica de Cebiche vienen del Virreynato del Perù y la Costa Norcentral de la Region Peruana. Si el Cebiche no es un Plato Peruano entonces las Enchiladas y Los Tacos son simplemente Platos Guatemala y todo el Norte del Caribe.

  • Unos cuantos comentarios: puede ser "cebiche" o "seviche" / cebiche se hace desde Chile hasta México, el concepto es el mismo, cocinar el pescado fresco en limón y sal / el mejor, de lejos, es el peruano (y no porque yo sa peruano, pero el resto del mundo opina igual, incluso los chilenos, ecuatorianos y mexicanos - al menos los que han venido al Perú) / la "cosa" que han hecho en el video es mas al estilo mexicano. En Perú, en 5 minutos con limon, cebolla, ajo y sal... delicioso!

  • te equivocas, si está correctamente escrito, seviche... a decir verdad es la forma más correcta, sólo que también es válido escribirlo así: cebiche o ceviche.

    El seviche lleva choclo (maiz hervido), camote y rocoto... si no, no es seviche y lógico, tiene que ser probado en el Perú, porque el limón es distinto, hay mejor pescado y la forma es mucho mejor.
