Hi there! I am just getting started home baking and having a few hiccups! I am going to try your recipes later today! I am wondering why you use 2 T yeast with your multigrain and only 1 T with this one. Is it because of the other grains? In other books I've seem them call for even less yeast... this baking bread is a tricky art!
@weizzer23 I find the multi grain bread a bit heavier than the whole wheat and doesn't rise as well with out the extra yeast. I sometimes will add 1 and a half TBSP of yeast to my wheat bread if the yeast is older. You will have perfect bread with a little practise :)

@CookingWithCandra Thank you very much for your reply! I find it is very heavy for sure, my version has even more grains in it! I modified it from a bakery I was working at last summer. It works easily in the big mixer and proofer, but when you don't have either of those it becomes much harder! It is a very dense loaf and also I think I am not kneading long enough and over proofing too. Today I will try just a whole wheat and do the window pane test! Here's hoping!
Maybe you can answer a few questions I have.Is there any difference between rapid rise yeast and instant yeast? Also I made some buns on the weekend and as I was pulling them out of the oven I suddenly remembered that I forgot to add the salt.Is there anything that can be done with them? Mind you I just about have them eaten anyway... :-)
Just made this bread today. Wonderful. fluffy and tasty! And I used my meat slicer to cut the bread into 1/2 slices. It worked great. Thanks so much for posting these videos.

can you please stop using "shortening" in your recipes and use something that can be found in the local supermarket, that would actually be useful to the viewers, it seems like all of your recipes have shortening.

@lambosnicko If I were going to use Rye flour in this recipe, I would only use 40% or less of the total amount of flour as Rye flour and leave the rest as Whole Wheat. The bread probably won't rise as high as the regular whole wheat.
I have not made a lot of Rye bread because I am Not a big fan of Rye bread :)

Ok, I made this bread step by step except i forgot to butter the top of the dough when rising in the bread pan, i did it about 10min after. i had it on the window seal which did cool down when the sun went down but it did not rise to double, i gave it an hour and a half but still didnt rise. It rose in the bowl during the first rise to the same size as yours did. Can you tell me what i did wrong?
@NisbettMariya I'm sure you didn't do anything wrong. Sometimes the quick rise instant yeast just can't make it through the second rise. If this is the case, you can omit the first rise, just cover the dough and let it reast for 10 minutes after kneading, then shape into loaves in your pans, let rise and bake. let me know how you make out.
I'm going to make this for my aunt for Christmas. Since she is a health food fanatic, I'm planning on adding 1/3 cup of oatmeal. Do you think that would work.
Update: Have been baking this bread regularly for my 95 yr old Mum. She has 2 slices as toast for her brekkie, sandwich at lunch & its far more nutritious than the store bought stuff. Happy to bake it for her & cant thank you enough for this recipe. I might try using more white flour in this for Thanksgiving dinner rolls this wknd for the family. Do you have a recipe for "Malt Bread"...you know that loaf that they sell at the supermarket thats tubluar & round? @mukwah1111 Hi C When did you add the salt? You didnt show that addition? I watched it several times to recheck but dont see where you added the salt ? I am assuming it was after the initial mixing ? before the additional flour was added ?
@mukwah1111 Got right off the computer & made a double batch of this bread. The first rise went great but once I formed it into loaves it didnt double in size? Not even over the top of the loaf pans...could it be that your pans are smaller ? Mine are basic bread loaf pans.......dont know what happened....as I said, the first rise was perfect..doubled in volume...left the loaves for 90 mins but didnt double..rose but not enough?
@mukwah1111 Hmmmmm...that's weird. Funny it would rise on the first and not the second... How old is your yeast? If my yeast is getting near the expiration date, I will add an extra half Tablespoon to the recipe just to make sure it rises enough.
@CookingWithCandra My yeast is good til Aug 2011 & it rose beautifully the first rise....weird eh how it didnt rise well in the loaf pans? They baked up beautifully but were more like big buns instead of bread...great crumb, super fresh, nice texture ...just didnt rise in the pans for some strange reason...anyway lots of mini loaves/large buns to share with my grown kids & mom. Thx ! I will keep working at it til I get it perfect
@CookingWithCandra I think it might be the pan size? Mine are 1 pound pans and there is 16+ ozs of flour in the recipe? plus 2 cups of water and that makes 2 small loaves or 1 big one ? I am making a single batch - as per your recipe right now. Its in its 1st rise...will gauge the dough when its done & see if it will be just 1 single loaf of bread and let you know. Thx again

My pans are one pound pans & this recipe is too big for one pan but too small for 2 pans....I will have to half the recipe again to fill 2 of my pans & yield 2 full loaves. Its a fabulous recipe and well worth working with to get the size right for my own pans. Thx again !!!!

I must have 6-7-8 cups of mostly whole wheat flour, 2 tbs yeast, 1/2 cup shortening, 1/2 cp raw sugar dissolved in 4 cups of hot water & now have 3 pans of your "double loaves" rising and just about ready to bake...they look PERFEC! 2 big bum shaped loaves in each pan and its going to be awsome ! <<<waves oven mitt so fresh bread smell wafts over to Candra's house........yummmmmmmm....comfort.....nostalgia......heavenly .....
@mukwah1111 Ha, Ha...you are right! I forgot to add the darn salt :) I usually add it with my last cup of flour, before I get into the kneading part. My bread doesn't rise as well, if I put the salt in too early in the process. It reacts badly, if it comes into direct contact with the yeast.

@whatayawant I don't think there is any difference between the rapid rise and quick rise yeasts.
It would be too late to add salt after they are formed and rising...LOL

@mukwah1111 Sounds good! If I were you though, I'd keep the recipe the same but add an extra 1/2 Tablespoon of yeast and see how that works.
