Works very well without water in the pan. Especially for those short 2 to 4 hour smokes for things like chicken. I wrap my water pan in foil for easy clean up. WSM is awesome. Add a BBQ Guru temperature control system and it's a smokin' beast:)
I have the Brinkmann 852-7080-V Gourmet Charcoal Smoker and Smokenator 1000 & Hovergrill Kit on my 22.5 kettle set up. Considered this smoker once moved. I'll have to give it a go, thanxs
Boy, you're getting quite a collection of smokers. I've looked at the WSM but haven't jumped in yet. Your first experience is getting me interested again. Thanks a lot...
@garygardens Well kind of like the veggie gardening, small steps. Because i had the masterbuilt which was great and then quickly got the ProQ (similar to the WSM) and couldn't figure it out and got frustrated and sold it and went back to the Masterbuilt. Of course now i'm right back there and this time love it. Go figure.
@ktrain420247 So very true. I'm still a novice in my mind and this thing has been chugging along with no problems. Granted I won't know how well it works in cold weather for 8 more months, but even then I heard it does well.
Soooo much bang for the buck with the WSM! Hard to beat this smoker and it stands up shoulder to shoulder with the multi-thousand dollar pits in almost every competition. Great choice!
@sd4547 So far that is definitely right. I really liked the offset I got for the competitions and it holds temp pretty well, but uses more fuel. Will be nice to have both.

How easy is it to do a long smoke 8-12 hrs? Looks like a nice smoker, may have to look into it more! Thanks for sharing!

@40sigsauer Very easy. It takes a few times to understand how the vents work, but once you do it is easy.

I had an old Electric Smoker and the heating element busted, so I've been looking for a new one and think I might try this one out.
Smoking meat has to rank as one of the best smells around!
