I followed this "recipe" for brewing coffee and am now enjoying great home brewed coffee. I also add a pinch of kosher salt to take off the edge of bitterness and smooth out the brew beautifully (a tip from Alton from a different show).
Never ever keep coffee beans for a month or longer, no matter how they're being stored. Coffee beans of any kind, and any roast, should be kept only 2 weeks after roast date. After that, toss them out. They will sour long before they go stale. Stay away from all store bought beans and buy from a local roaster, or online roasters that roast a day before shipping out.
I love those analogies, they really helped to clear things up! The only problem with this episode is that it ruined the coffee houses for me. After drinking my own coffee, their's sucks heh There really is nothing quite like enjoying that first cup of coffee in the morning :)
I had the same experience. We moved away from our favorite coffee shop so I had to learn to make GOOD coffee. It's such a pleasure. We buy our coffee in Starbucks but we brew ourselves because their brew doesn't taste as good. I love Alton Brown.
i think that starbuck's problem is that they brew the coffee way too hot. even their espresso. dunkin donut's, in my opinion, has that problem as well as over-roasted beans.
coffe is a fix... its not suposed to taste good. and it dosen't, mabey if u have been drinking it for many years u might adjust to it but.. no... not good.. i do enjoy a good cafe latte.. but there is alot alot of milk in that :P

heh no not what i ment, good wine is art, its enjoyment and a social connecter many great things. crappy cheap mass fabricated wine that i buy for 1 dollar for 2 liters down at my mega mart when im gouing to a party is only for the Couse and effect... i drink and try not to puke and i get drunk....
Life is to short for bad tasting anything if you can make it taste good. Just like beer, whey would you drink natural light, when you can have sam adams light?
Water is probably the most important thing for any Coffee, and Tea if you're into Tea also.
The Chinese are all about tea and teach regularly that the same tea, in the same type of pot brewed with different kinds of water affects the smell, color and taste of tea.
