@Ericules555 Not sure where you are from I am in the states but married to an italian so have true appreciation for pasta. I often use Penne or Rigatoni for Mac N Cheese of coure the American boxed kind is normal the elbow type which works too. What you want with this type sause ether way is a tubular type of pasta which all the above are to soak in the middle of it. I find pasta and all the shapes facinating and done for a reason depending on the sause using.

My suggestion is to cook the roux (flour and butter for longer) Maybe reduce the heat when cooking the roux so you can cook for longer without the roux becoming dark.

This looks really nice, but it looks like what we used to call "Yankee Macaroni" when I was growing up!!! Look on here and see if you can find a recipe that calls for eggs rather than using a roux- it sets up kind of like a custard, and your cheese won't seize up. Believe it or not, my favorite ones are made in a slow cooker (crock pot)! I used to make it for my family when I lived over in England.

The bacon you use, is it back bacon or peameal bacon, it looks quite lean, not the the regular bacon most people in North America cook up for breakfast made from pork belly?????

@OriginalNakedChef you are most welcome, I have always been fascinated by the thickening powers of a simple butter/flour roux and thought this info I found might help others discover it too. THe first time I used it was to make a mac&cheese with some extra old sharp white cheddar, a friends mom used to make when I was a teenager and she is the one who sparked my interst in the roux. Her macaroni and cheese was simple and awesome. Your vid made me think of those good times. :)
great job. the inclusion of the bacon, onion, tomatoes and mushrooms really completes it. perhaps some breadcrumbs on top before baking too. the sauce at the beginning is similar to a bechamel.
I had it in my mind to use some breadcrumbs as you suggest. It went clean out of my mind.
The inclusion of bacon, tomatos, onions and mushrooms does make the dish more interesting than the standard mac & cheese. The white cheesy sauce is as you say similar to becahmel and easy to make. Using mature cheese in the sauce is nice gives it a nice flavour.

I don't have any bay leaves either.
Aren't those just a side option? (i.e you can choose to put them in or not)
I don't see what type of taste they bring though to be honest..... hardly any!

Thanks for the comms and sorry to hear the sauce was floury.
My suggestion is to cook the roux (flour and butter for longer) Maybe reduce the heat when cooking the roux so you can cook for longer without the roux becoming dark.
Hopefully that will cure the floury problem.

Thanks for another great post! I made this for dinner yesterday, and the mustard and cayenne really gave it that extra oomph. (I might use a bit less cayenne next time though). Also I managed to throw in the tomatoes (from my yard) that exploded in the rain in the last days. All very best to you...

This looks really nice, but it looks like what we used to call "Yankee Macaroni" when I was growing up!!! Look on here and see if you can find a recipe that calls for eggs rather than using a roux- it sets up kind of like a custard, and your cheese won't seize up. Believe it or not, my favorite ones are made in a slow cooker (crock pot)! I used to make it for my family when I lived over in England.

The bacon you use, is it back bacon or peameal bacon, it looks quite lean, not the the regular bacon most people in North America cook up for breakfast made from pork belly?????

from Ochef.com A roux, as you know, is a cooked mixture of generally equal parts flour and butter, that is used to thicken soups, sauces, and stews. The butter is melted gently, the flour is added, and the mixture is stirred and cooked over medium heat to remove the taste of the uncooked flour and to begin the roux’s thickening process. The longer you cook, the darker it becomes, 2 Tbsp of butter and flour for 2 mins, you’ll have a white roux; if you cook them for 4 mins it will be brown.

@OriginalNakedChef you are most welcome, I have always been fascinated by the thickening powers of a simple butter/flour roux and thought this info I found might help others discover it too. THe first time I used it was to make a mac&cheese with some extra old sharp white cheddar, a friends mom used to make when I was a teenager and she is the one who sparked my interst in the roux. Her macaroni and cheese was simple and awesome. Your vid made me think of those good times. :)

great job. the inclusion of the bacon, onion, tomatoes and mushrooms really completes it. perhaps some breadcrumbs on top before baking too. the sauce at the beginning is similar to a bechamel.

I had it in my mind to use some breadcrumbs as you suggest. It went clean out of my mind.
The inclusion of bacon, tomatos, onions and mushrooms does make the dish more interesting than the standard mac & cheese. The white cheesy sauce is as you say similar to becahmel and easy to make. Using mature cheese in the sauce is nice gives it a nice flavour.
