Look how the chocolate gnosh does not spread out when she smashes the cookies together. So a better idea would be to let it set at room temperature so that it spreads easier, or you could refrigerate it for 5 minutes, and then let it sit at room temperature for five minutes.

I actually tried this recipe, and honestly, they looked better than they actually tasted. The mint was overpowering, and the cookies were dry and bland- esp. without the ganache filling. We won't be making these again next year.
