They do sound a bit different. He has the sound of a german bagpipe. If people hear bagpipe they mostly think of the scotish great highland bagpipe. He could switch to the GHB but hey is not playing scotisch tunes, so...
And there is a difference in sound, a bagpipe (except the smallpipes) cannot be played in small rooms without getting an auditory defect.
And the electric version is mostly a binary on-off. So you hear very clear note changes which are usually a bit blurry if played quick
