Well i know that alcohol is evaporating but, i am a muslim and i cant eat it once it's included even knowing it evaporates. So thanks @Cammerlot i dont think if there is any asian markets in my country but i will search for non-alcoholic mirin:D

    It does evaporate, but the taste of the rest of it will still be there. o.o

  • @hikarushidou alcohol usually evaporate when it's boiled. It's cooking point is about 80 degrees celsius (water is 100 degree celcius) (not like that helps ^-^') but I think there won't be alcohol in the food because when I remove the bowl from the microwave, I get very strong alcoholic scent... I think the alcohol would be all out then ... hope it helps :') *I think my explanation is very vague OTL*

    I don't know about sake, but there is a non-alcoholic mirin you can find at many asian grocery markets. Good luck!

  • @hikarushidou Oh...i assumed you can't have it for religious reasons. I'm sorry. I guess you might as well just leave it out..or look for non-alcoholic mirin just as Cammerlot said :/ Maybe check on amazon?

  • @hikarushidou Ok well you could just leave it out and use some other japanese flavours like eg Ponzu etc

  • @hikarushidou after its cooked, the heat removes the alcoholic properties of it (burns/evaporates the alcohol off but retains the taste). so alcohol as a cooking aid isn't really considered alcohol be it medically or in terms of beliefs.

  • @valkerymillenia thanks for the reply. well as the religious beliefs i have it corcerns me. even it evaporates. and everybody thanks for reminding a biology graduate that alcohol evaporates! and for your other comment. i just asked a non alcoholic way as a method of cooking or alternative way for generally cooking, so of course i can choose another recipe or i dont eat this, thats all:)

  • @hikarushidou however, if you are still iffy about it then better pick another recipe, i think this is one of the few that need the alcohol to lock the flavour. sorry

  • @valkerymillenia i think she/he meant that alcohol is a no no.. like muslis we cant take alcohol at all so yeah... but the mirin and sake gives a sweet taste to the food. so suggested is to use honey or sugar syrup.

  • I made this without the sake or tying it. I just shape it like it is in the video, and then cook it that way. After it is cooked, it stays in the shape. I also like adding a tablespoon of teriyaki sauce. It adds a little something extra.

  • here's a vey important cooking clue. NEVER. USE. MICROWAVE. WITH. MEAT. got it ? it takes off all the taste and it gets all soggy and yukky and totally disgusting. not even worth eating it

  • @initiald22 With western ovens, they might not be. But remember, they use a different kind of "microwave oven" over in Japan. When i was there, they basically did all their cooking with what looked like a conventional oven, but has the power of an actual large oven. But i'm not sure if he uses it :\

  • i recently got a charsiu recipe from a manga by nishi yuuji "yokohama chinatown fantasy". it tastes good.

    the sauce is from mustard, brown sugar, honey, mirin, shoyu, and i add ginger and garlic just like you do. the taste becomes sweeter and more like chinese food. i can't wait to try it as a topping to my ramen ^^

  • u can add five spice powder, honey, and red food colouring for a more chinese style. And then if u want u should roast it on a spit in a grill oven lol.

    But this style is way healthier and has good taste too.

  • @darkaznblo0d I'd say probably about the same amount of time. If it's undercooked that would be fine and you could just pop it in the microwave a litle longer.

    If it's still a little pink on the inside, and you were to eat it I would say that's ok. Pork is a lot more forgiving in terms of eating it undercooked than chicken is....

    Let it cool down for a little while. And you can ziplock any surplus(marinade,too) in the freezer. It lasts 2 weeks at least.
