'wool gathering' is an expression meaning daydreaming. Will's use of the expression means he speculates the monk is visiting her to "daydream" or "fantasize" about his attraction to the widow that he cannot act upon because he's a chaste monk :) that's my interpretation ;)

developing their romance realistically would take too long for any but a romance novel. so i dont know why people complain about how unrealistic it is since any kind of romance shown in fictional stories are always more or less unrealistic.
