  • There are ways to cook lamb all the way through and it will still taste like lamb.

  • I'm 13 and just made this with his garlic shrimp recipe for my mum and her friends. I only cooked, I wasn't allowed to sit down and so I was just going to have leftovers. BUT, everyone loved it so much I went hungry. At least it was good/great.

  • @NiTheGod I doubt it, I used to like well done meat but it can be really dry and tough sometimes so I switched to medium and haven't looked back :)

  • My favorite meat when I was young was either sheep (and lamb) or goat mutton (any cut really). I grew up in the backwoods you might say, so both were available. Now that I'm in college, I no longer have access to fresh meat like that :(...but I like to know how to cook it for later :D

    noob u obviously don't know how to cook, that is not raw, thats rare. If you bake to long the meat will harden and not become tender.

  • @CloysterRulez that's why men created culinary and since fire they cooked everything in it. i personally hate rare even seafood. and that's blood!!! (sorry keep saying that) i love blood but it has to be boiled or fried(but there is this one food from my place that uses raw blood to spice)rare has that particular taste of the natural raw meat and in my opinion will overcome the spices a bit.while cooked ones, is like a blank piece of paper we can put anything in it.

    What about sashime or whatever that raw fish that japenese people eat? They don't cook it at all. By the way, thats what you prefer. Most people prefer rare meat.

  • @CloysterRulez japaneseshashime used very fresh fish right out when they caught them and they have the most innovative technology for preserving them plus their ocean is filled with fresh fish none like any other. though it still dangerous because some people still have food poisoning from japs. i dunno, i thought it was just men who likes rare.

  • @leokuan here in chicago semi-boneless shoulder goes for $3.99 lb. Full leg is $5.99 lb american lamb. Australian-New zealand lamb goes for $4.99 lb. Now american rack goes $12 lb but New Zealand rack through Rest Depot frozen is $6.99 lb.

  • However, the one thing that keeps my rack of lamb from being perfect is that the crust tends to come off when I cut into the meat just like the video. I want total adhesion! I was thinking maybe a light coat of flour between the seared lamb and the dijon or perhaps a little bit of beaten egg either added to the crust mix to help hold things together, would these methods work?

  • I've made this a couple of times with some minor adjustments in the seasoning department, most notably in the form of lots of fresh rosemary (the stuff I get locally is pretty sweet but not pungent enough) and cumin. Perfect doneness and perfect taste.

  • Lamb is a wonderful meat, with flavor, and , IMO, as tender as tenderloin at half the price per pound

  • @jbadal1 a rack of lamb from costco is like 15 bucks, which is just as expensive as beef tenderloin if not more.

  • @MrTheYoussef lol that is an Urban Legend!! it was proven months ago that its complete and utter bollox! the only way pork becomes "unclean" and producing maggots (which means flies have laid eggs in the meat) is if it has been left outside for flies to get at it! what might happen and "may" resemble "maggots" is when the acid in coke comes into contact with said meat the residue of the carbonation in coke cogulates the protein stucture of the meat! dont believe everything you see on the net!

  • Chef John -- I made this for a little early Thanksgiving some of us had here (we were going seperate ways for the holiday, and I didn't have time to make a turkey). I used pecans instead of pistachios (it's a Texan thing). It took a bit longer than 25 minutes, but it came out great.

  • Hey chef, I was wondering if crusting lamb, and other things as well, is common thing to do. Reason being your lamb seems pretty similar to Ramsey's crusted lamb, and I have noticed other "crusted" meat videos as well. Basically I'm wondering about the "food history" of crusting, if you know anything about that. Great videos by the way.
