@leokuan here in chicago semi-boneless shoulder goes for $3.99 lb. Full leg is $5.99 lb american lamb. Australian-New zealand lamb goes for $4.99 lb. Now american rack goes $12 lb but New Zealand rack through Rest Depot frozen is $6.99 lb.
However, the one thing that keeps my rack of lamb from being perfect is that the crust tends to come off when I cut into the meat just like the video. I want total adhesion! I was thinking maybe a light coat of flour between the seared lamb and the dijon or perhaps a little bit of beaten egg either added to the crust mix to help hold things together, would these methods work?
I've made this a couple of times with some minor adjustments in the seasoning department, most notably in the form of lots of fresh rosemary (the stuff I get locally is pretty sweet but not pungent enough) and cumin. Perfect doneness and perfect taste.

@MrTheYoussef lol that is an Urban Legend!! it was proven months ago that its complete and utter bollox! the only way pork becomes "unclean" and producing maggots (which means flies have laid eggs in the meat) is if it has been left outside for flies to get at it! what might happen and "may" resemble "maggots" is when the acid in coke comes into contact with said meat the residue of the carbonation in coke cogulates the protein stucture of the meat! dont believe everything you see on the net!

Hey chef, I was wondering if crusting lamb, and other things as well, is common thing to do. Reason being your lamb seems pretty similar to Ramsey's crusted lamb, and I have noticed other "crusted" meat videos as well. Basically I'm wondering about the "food history" of crusting, if you know anything about that. Great videos by the way.

Chef John, can you do a vid on focaccia bread? i love the stuff but ive only ever had it in school and forgot to steal the recipe when i was done classes. i've only ever made it once and my favourite thing to put on it is sauteed onions and coarse salt and eat it with garlic butter. i took hotel management and with that had to take a couple of cooking classes which is where i was introduced to that as well as risotto which i also absolutely love. thanks!

I had to press pause half way through because I was getting too hungry at the thought of the finished lamb! It looks sooo good! That was a great sear on the rack of lamb you did there! I cannot wait to try this, I really want to make one for my family, my mom said we will get one for Christmas, we already got most of the food for Thanksgiving lol! Thanks for sharing!
